Emily Makrez's presentation is being hosted by the GPL Plant Powered Group but is open to all!
Learn what koji is and the chemistry behind what makes this a wonder in the kitchen. Koji is the key element of miso, soy sauce and sake. Emily Makrez, owner of F-Word Farm and educator on all things fermenting, farming, and foraging related, will show you how to make shio koji. An incredible marinade and flavor booster that will make every burger or vegetable you cook turn out amazing.
About the Speaker: F-Word Farm (Farming, Foraging, Fermenting) was started out of a love for the environment. F-Word Farm is an Earth centered farm that practices organic, no-till farming focused on building eco-systems & soil. Every small batch of vinegar is handcrafted primarily from F-Word Farm grown or foraged ingredients, and some second-use ingredients destined for the trash. They contain “good for you” gut microbes, acquired through a long slow fermentation period. The owner is also passionate about teaching fermentation methods to reduce food waste, foraging to promote appreciation for local food, and farming to protect our soil & eco-systems.
Made possible by the Groton Public Library Endowment Trust.
Registration for this event opens Tuesday, November 26 at 10:00 AM.
